Grandma's Pumpkin Bars with Cream Cheese Icing

Preheat oven to 350. Grease and flour jelly roll pan (or cookie sheet with raised edges)

Cream together:

1 cup canola oil
2 cups sugar
4 eggs
1 15 oz. can pumpkin

Mix the above well. Stir the following and add:

2 cups flour
1/2 teaspoon salt
1/2 teaspoon ground cloves
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1 teaspoon baking soda
2 teaspoons baking powder
2 teaspoons cinnamon

Mix all together - pour into greased pan. Bake 25-30 minutes or until toothpick inserted into center of cake comes out clean.

Cream Cheese Icing - 

1 8 oz. pkg. cream cheese, softened
1 Tablespoon milk
1 teaspoon vanilla
3/4 stick of butter (6 T), softened
4 cups powdered sugar

Beat with electric mixer until smooth and creamy. 
Tip: cut bars before icing for easy serving. You'll amaze all your guests!
